Chicken Normande

25 g. Raisins (Seedless)
50 g. Butter
4 Chicken Pieces
¼ tsp. Salt and Pepper (to your taste)
700 g. Apples(Peeled and Sliced)
150 ml. Cream (Double)
2 tbsp. Lemon Juice
2 tbsp. Cider
½ tsp. Cinnamon (Ground)
Preheat the oven to 160ºC / 325ºF
Soak the raisins for 1 hour in warm water. Heat half the butter in a frying pan and brown the chicken pieces on all sides. Remove to a plate and season well.
Add the remaining butter and toss in the apple slices so that they become lightly browned only.
Place half the apples on the bottom of the casserole and place the chicken on top.
Mix the cream with the lemon juice, cider, salt and black pepper, cinnamon and raisins.
Add the remaining apples around the chicken, season and pour the cream over the chicken and apples. Cover and cook for 1 hour. Taste and adjust the seasoning.
