Traditional British, Main Course Gluten Free Nut Free, Chicken Pieces(Bone In)

Citrus Chicken

Method

25 g. Butter
4 Chicken Pieces
¼ tsp. Salt and Pepper (to your taste)
2 tsp. Brandy
300 ml. Chicken Stock 
2 tbsp. Sweet Sherry
1 tsp. Dried Herbs
1 Grapefruit
1 tbsp. Cornflour
2 tbsp. Sugar 
15 g. Watercress For Garnish

Preheat oven to 160ºC / 325ºF

Melt butter in a frying pan and brown chicken on all sides. Remove to a casserole or brown in the casserole, season well.

Heat brandy in a ladle and set alight, remove chicken from the heat and pour over the brandy.. Add the stock, sherry and herbs, cover and simmer for 1 hour.

Meanwhile remove thin strips of grapefruit peel with a sharp knife. Cut the grapefruit across the top and cut around the skin removing all the white pith. Cut into each segment to obtain a slice without skin. Squeeze all the remaining juice into the casserole.

Taste and adjust the seasoning. Thicken stock if necessary with the cornflour, adding the sugar, grapefruit segments and strips of grapefruit peel.

Garnish chicken with watercress.
