Five Spice Greens

1 Spinach (Fresh Bag)
1 Aubergine (Diced Small)
125 g. Beans (Frozen Green Beans)
1 tsp. Salt to Taste
2 tsp. Indian Five Spice
1 -2 Chillies (Dried Red)
6 tbsp. - 8 tbsp. Vegetable Oil
Add the aubergine and the green beans to a frying pan, keeping the heat turned high, and fry till they start to brown.
Add the washed and thoroughly drained spinach, fry, stirring, on high again to avoid it exuding too much water. When the spinach has been well fried and is not losing any more water add the salt, give it a little more heat then serve with Fish in Mustard sauce and plain boiled rice.
N.B Indian, or to be exact, Bengali Five Spice consists of the following in equal quantities: fenugreek seeds, nigella seeds, fennel seeds, mustard seeds and cumin seeds.
