Spinach,Pine Nuts and Lemon Spaghetti

Method

50 g. Pine Nuts
200 g. Spaghetti (Dried)
2 tbsp. Olive Oil
1 Spinach (Bag of Baby Leaves )
1 Lemon (Juice and Zest)
1 Garlic Cloves
1 Chilli (Red)
100 g. Tomatoes (Cherry)
50 g. Cheese - Parmigiano Reggiano (Grated)
½ tsp. Salt and Pepper (to your taste)

Toast pine nuts in a small frying pan over a low heat. Once golden remove from the pan.

Cook pasta in a large pan of water, drain and return to the pan. Add the olive oil, spinach, lemon zest and juice, garlic and the toasted pine nuts, season to taste.

Toss all the ingredients until evenly mixed, serve topped with shavings of parmigiano reggiano and freshly ground black pepper.

This is a nutritious pasta dish, the cheese is a good source of calcium, pine nuts are rich in vitamin E which helps increase the body's immune response and promotes healthy skin, spinach is a good source of iron whilst lemon is a good source of vitamin C.
