Indian / Pakistani, Side Dish Vegan Gluten Free Lactose Free Nut Free, Cabbage (White)

Bandh Gobi Ki Subzi

1 Head of Cabbage (White)
1 Onion 
2 -3 Large Potatoes (New Potatoes)
½ tsp. Cumin Seeds
2 Garlic Cloves
1 Tomatoes (Fresh)
½ tsp. Turmeric Powder
1 tsp. Coriander Powder (ground)
½ tsp. -1tsp. Chilli Powder
½ tsp. Sugar (Granulated)
½ tsp. Salt to Taste
125 g. Peas (Frozen Petit Pois)
1 tsp. Coriander (Fresh Chopped)
3 tbsp. Vegetable Oil

Finely slice the cabbage, having first cut it in quarters. Chop the onions, grate or otherwise mince the garlic. Cut the potato into inch cubes.

Heat the oil in your pan till very hot then add the cumin seeds: as soon as they darken, add the onions and garlic and fry till medium brown.

Add the potatoes and fry till almost tender.

Add the turmeric, ground coriander, chilli powder, sugar and salt. Fry till the turmeric loses its raw smell

Now add the tomato and fry till the oil reappears.

Add the cabbage, stir thoroughly to mix, then cover on a low heat till the cabbage is cooked but retains a little bite.

Add the petit pois, stir in well to distribute evenly. Check for salt.

Sprinkle over the chopped fresh coriander to serve.
