Mediterranean, Main Course Gluten Free Lactose Free Nut Free, Chicken Thighs (Skinless and Boneless)

Honey Spiced Chicken

Ingredients

Method

750 g Chicken Thighs (Skinless and Boneless)
1 Onion (Sliced)
4 Garlic (finely chopped)
1 Pepper (Red Bell, Sliced)
1 Pepper (Green Bell, Sliced)
2 tsp Ginger, Garlic, Chilli Pulp
1 Tomatoes (Tinned, Chopped)
2 tbsp Honey (Runny)
1 tbsp Tomato Puree
½ tsp Onion Powder
½ tsp Garlic Powder
1 tsp Paprika
½ tsp Cumin Powder (Ground)
½ tsp Coriander Powder (ground)
¼ tsp Salt and Pepper (to your taste)
15 g Coriander (Fresh, Roughly Chopped)

In a heavy bottomed pan, fry the onions and the garlic and add them to a slow cooker. Place all the other ingredients into the slow cooker and cook on high for 3 1/2 - 4 hours.

Place on a serving plate and sprinkle with coriander. Serve with boiled rice.

N.B. Ginger garlic Pulp is equal quantities of ginger, garlic and chillies blended with some water or oil.
