Beef with Orange

500 g Sirloin Steak
1 tbsp Soy Sauce (dark)
1 tbsp Rice Wine
1 in Ginger (Fresh Finely Grated)
1½ tsp Cornflour
1½ tsp Sesame Oil
80 ml Groundnut Oil
2 Chilli (Dried Red Chillies Cut in Half Lengthways)
20 g Orange (Peel coarsely chopped)
½ tsp Roasted Szechuan Peppercorns Finely Ground
1 tbsp Soy Sauce (dark)
¼ tsp Salt to Taste
1 tsp Sugar
½ tsp Sesame Oil
Cut the beef into thin slices against the grain. Place the beef into a bowl and mix with the rice wine, soy sauce, cornflour, 1 tsp. sesame oil and ginger and marinade for 20 minutes.
Heat the oil in the wok until very hot. Remove the beef with a slotted spoon and fry in a very hot pan until it browns. Remove the beef from the pan and let it drain in a colander.
Pour off most of the oil only leaving a teaspoon. Heat the oil then add the dried chillies. fry for 10 seconds and return the beef to the pan. Add the rest of the ingredients and stir fry for 4 minutes, mixing well. Serve immediately.
