Stir Fried Lamb with Garlic

350 g. Lamb Steaks
2 tsp. Rice Wine
2 tsp. Soy Sauce (dark)
2 tsp. Soy Sauce (Light)
½ tsp. Sesame Oil
1 tbsp. Vegetable Oil
10 g. Onions (Spring Onions Finely Sliced)
3 Garlic (Finely Sliced)
¼ in. Ginger (Fresh Finely Chopped)

Cut the lamb into thin slices and place in a bowl, add the soy sauce, rice wine and the sesame oil and marinade the lamb for 30 minutes.

Drain off the liquid marinade. Heat the wok or frying pan, add the oil and when very hot add the lamb pieces and just a little bit of the marinade. Fry for 2 minutes then add the spring onions, garlic and ginger and stir fry for 4 minutes more.

Serve immediately.
