Spicy Chicken with Peanuts

225 g. Boneless Chicken Breast
1 Chilli (Dried Red Chilli)
2 tbsp. Vegetable Oil
75 g. Peanuts (Raw)
1 tbsp. Chicken Stock (Fresh)
1 tbsp. Sherry (Dry)
2 tsp. Soy Sauce (dark)
1 tsp. Sugar (Granulated)
1 Garlic (finely chopped)
15 g. Onions (Spring Onions Finely Sliced)
½ in. Ginger (Fresh Finely Grated)
1 tsp. Rice Wine Vinegar
½ tsp. Salt to Taste
1 tsp. Sesame Oil
Cut the chicken into cubes and set aside.
Heat the oil in a pan and split the dried red chilli in half and add it to the hot oil, remove it when it turns black.
Add the chicken and peanuts to the pan and cook for a minute, remove from the pan.
Put all the remaining ingredients into the pan except for the sesame oil, bring to the boil and then turn the heat down.
Return the chicken and the peanuts to the pan and cook for a further 2 minutes in the sauce. Add the sesame oil and serve immediately.
