Chinese, Main Course, Chicken Breast (Boneless, Skinless)

Chicken with Cashew Nuts

250 g. Chicken Breast (Boneless, Skinless)
1 Egg White
1 tsp. Salt 
1 tsp. Cornflour
160 ml. Groundnut Oil
60 g. Cashew Nuts
1 tbsp. Sherry (Dry)
1 tbsp. Soy Sauce (Light)
20 g. Onions (Spring Onions Finely Sliced)

Cut the chicken breasts into small cubes and place in a bowl with the salt, cornflour and egg white and mix together. place in the fridge for 30 minutes.

Heat the wok on a high heat and add the oil. when hot add the chicken and stir fry the chicken keeping it moving so it does not stick.

When the chicken is cooked which won't take long, place the chicken in a sieve to drain off the fat.

Clean the wok and place it back on the heat and add a tablespoon of the oil, when hot add the cashews and stir fry for a minute. then add the rest of the ingredients, return the chicken back into the pan and stir fry together for another 2 minutes.

Garnish the chicken with the spring onions and serve immediately.
