Chinese, Main Course Lactose Free Nut Free, Chicken Pieces(Bone In)

Spiced Deep Fried Chicken

400 g. Chicken Pieces(Bone In)
600 ml. Vegetable Oil
80 g. Plain Flour
1 tsp. Chilli Powder
2 tsp. Sherry (Dry)
1 tsp. Soy Sauce (Light)
1 tsp. Soy Sauce (dark)
20 g. Onions (Spring Onions Finely Sliced)
½ in. Ginger (Fresh Finely Grated)
1 tsp. Sugar (Granulated)

Cut the chicken into strips and place them in a mixing bowl.

Blend all the marinade ingredients together and pour over the chicken pieces. mix through the chicken pieces and leave to marinade for 2 hours.

Heat the oil in the wok and sprinkle the chicken pieces with the flour then deep fry them a few at a time so as not to crowd the pan. cook for about 8 minutes or until cooked and drain on kitchen paper. Serve immediately.
