Oysters Deep Fried

250 g. Oysters (Shelled)
1 Eggs
25 g. Cornflour
2 tsp. Water
1 tsp. Baking Powder
½ tsp. Salt (Kosher)
1 tsp. Groundnut Oil
60 g. Breadcrumbs (Panko)
600 ml. Vegetable Oil
1 Lemon

Drain the oysters in a sieve and place them on kitchen paper.

Make a batter by mixing the egg, cornflour, water, baking powder, salt and oil in a bowl and let it sit for 30 minutes.

Place the breadcrumbs in another bowl and place an oyster in the batter then in the breadcrumbs then onto a plate. Continue to do this for all the oysters.

Heat the oil in the wok and when very hot deep fry the oysters until they are golden brown and place on kitchen paper. Continue until all are cooked. Serve with Lemon wedges.
