Braised Prawns

300 g King Prawns (Uncooked)
75 ml Chicken Stock (Fresh)
15 ml Sherry (Dry)
½ tsp Salt (Kosher)
2 tsp Sugar (Granulated)
1 tsp Black Chinese Vinegar
3 Onions (Spring Onions Finely Sliced)
1 in Ginger (Fresh Finely Grated)
1 tsp Cornflour + 1 tsp. water mixed together to make a slurry.

Peel the prawns and clean them thoroughly and remove the digestive cord by making a cut down the back and pulling the black cord out.

Wash the prawns and put them on kitchen paper.

In the wok add all the sauce ingredients and bring it up to a simmer. Add the prawns and cook gently for 3-4 minutes.

Serve at once.
