Sichuan Prawns in Chilli Sauce

300 g. Prawns( Raw)
10 ml. Groundnut Oil
1 in. Ginger (Fresh Finely Grated)
2 Onions (Spring Onions Finely Sliced)
2 tsp. Tomato Puree
1 tsp. Chilli Powder
½ tsp. Salt (Kosher)
½ tsp. Sugar (Granulated)
½ tsp. Sesame Oil

Wash and devein the prawns and dry on kitchen paper.

Heat the oil in the wok and when very hot add the ginger and spring onions.

Stir fry for a few seconds then add the prawns. After 30 seconds add the sauce ingredients and stir through the prawns. Continue to cook for 5 more minutes then serve.
