Deep - Fried Prawns

300 g King Prawns (Uncooked)
600 ml Vegetable Oil
1 Eggs
15 g Cornflour
2 tsp Water
1 tsp Sesame Oil
1 tsp Salt (Kosher)
4 Onions (Spring Onions Finely Sliced)

Wash and devein the prawns and dry them on some paper towel.

Place all the batter ingredients in to a bowl and whisk them until they are thoroughly combined.

Heat the oil in the pan until almost smoking. Put a cocktail stick into a prawn, dip it in the batter and lift it out allowing some of the batter to drain off then put it straight into the batter and cook for a few minutes.

Drain the cooked prawns on some paper towel and continue until all the prawns are cooked.

Serve immediately with some lemon wedges.
