Prawn Crackers

600 ml. Vegetable Oil
100 g. Prawn Crackers

Heat the oil in a wok or a deep fat fryer, when hot test it by dropping a prawn cracker into the oil, if it puffs up and floats it is ready.

Fry a handful of crackers at a time but don't over crowd the pan.

When they have puffed up and are floating on the oil scoop them out with a slotted spoon and drain them on kitchen paper.

Continue frying until they are all cooked.
