Classic French, Side Dish Vegetarian Gluten Free Lactose Free Nut Free, Potatoes (New Potatoes)

New Potato and Green Bean Salad

Method

500 g. New Potatoes
200 g. French Beans 
20 ml. Lemon Juice
1 tsp. Honey (Runny)
1 tsp. Mustard Wholegrain
3 tbsp. Extra Virgin Olive Oil
5 Spring Onions  (Finely Sliced)

Place a pan of salted boiling water on the stove and add the new potatoes and cook for 7-8 minutes until tender.

Whilst the potatoes are cooking steam the green beans for 3-4 minutes until they are just tender.

When the beans are cooked put them straight into a bowl of iced water to stop them cooking and to keep their vibrancy.

Drain the potatoes when cooked and keep warm.

Mix all the dressing ingredients in a bowl. Pour the dressing over the warm potatoes, add the beans and mix through so that the dressing coats the beans and the potatoes.
