Potato and Paprika Tortilla

45 ml Olive Oil
              275 g Potatoes (New Potatoes Thickly Sliced)
              1 Onion (Halved and  Sliced)
              3 Garlic (finely chopped)
              ½ tsp Paprika Smoked
              30 g Parsley (Chopped)
              6 Eggs Large
          Over a medium heat place a 20cm frying pan. Add the potatoes, onions and garlic and cook for about 10 minutes until tender. sprinkle over the paprika and stir through to coat the potatoes.
In a separate jug put the eggs and the herbs, retaining some parsley for the garnish, and whisk together.
Pour the egg mixture over the potatoes and stir it in a little and then leave it to set as it cooks. Cook for a further 10 minutes until it is almost set apart from the top.
Place a plate over the frying pan and flip the tortilla onto the plate then slide it back into the frying pan so the bottom is now the top. Cook for a further few minutes.
Garnish with parsley and serve warm or cold.
