Potato Salad with Pickled Onions

1.4 kg. Potatoes (New Potatoes)
2 Onions (Red, Sliced)
110 ml. White Wine Vinegar
160 ml. Cream (Soured)
3 tbsp. Mayonnaise
1 tbsp. Mustard (Dijon)
2 Celery (Sticks)
2 Gherkins
20 g. Dill (Fresh)
1 tsp. Salt to Taste
Firstly cut the red onion in half and slice each half into half moons and place in a bowl. Cover with the vinegar and set aside.
Bring a Pan of salted water to the boil and add the potatoes and cook until tender (about 15 minutes).
Drain the potatoes and replace the lid and leave for a few minutes to steam off the heat.
Then slice the potatoes into thick slices and add them to the onion mixture.
In a separate bowl mix the sour cream, mayonnaise, mustard, celery finely chopped, gherkin finely chopped and some seasoning.
Add the cream mixture to the potato mixture and combine. Check the seasoning and serve.
