Classic French, Lite Bite, Creme Fraiche

Tarte Flambée Alsatian Tart

30 ml Peanut Oil
100 g Onion (Finely Chopped)
250 ml Creme Fraiche
¼ tsp Salt and Pepper (to your taste)
½ tsp Nutmeg (Grated)
100 g Bacon (Streaky)
400 g Bread Dough (Recipe PÂTE Â PAIN (Bread Dough ) is in the recipe list. 

Place half the oil in a frying pan and fry the onions on a low heat until golden brown.

Remove the rind from the bacon and cut into lardons and using the remaining oil fry the bacon lardons until lightly brown, drain on a paper towel and set aside.

Mix together the crème fraîche, seasoning and nutmeg, stir in the onion and set to one side.

Pre heat the oven to 450ºF / 230ºC. Oil a 35 x 22cm baking sheet.

Roll out the bread dough on your work surface until it just fits on the baking tray.

Place the dough on the baking tray and spread the crème fraîche mixture over the dough. Sprinkle the bacon on the top and bake in the oven for 20 minutes or until the tart is cooked. Serve immediately.
