Pâte à Pain (Bread Dough)

Method
Dissolve the sugar in a cup in the lukewarm water. Sprinkle the yeast into the cup and stir. Set the cup aside in a warm place and allow the yeast to activate and rise for about 10 minutes, or until the mixture fills the cup.
Add the salt to the flour and mix through. Pour the flour onto your work bench and make a well in the middle. Pour the milk and the yeast mixture into the well and using your fingertips, draw the mixture together and roll into a ball.
Knead the dough by stretching it and folding and changing direction. Knead the dough for approximately 10 minutes or until the dough is soft and pliable and no longer sticky.
Place the dough in a large mixing bowl, cover with a clean damp cloth and place in a warm place to rise for 1 1/2 hours to allow it to double in volume.
Turn the dough out onto the floured surface and knead the dough with the palm of your hand to flatten it, knead for about 3 minutes. The dough is now ready for use.
