Classic French, Dessert Nut Free, Cherry (Fresh)

Clafoutis ( Baked Cherry Custard )

750 g Cherry (Fresh)
2 Eggs
1 Egg (Yolk)
130 g Sugar (Castor)
75 g Butter (Melted)
75 g Plain Flour
250 ml Milk (Full Fat)
15 g Sugar (Golden Castor Sugar)

Preheat the oven to 400ºF / 200ºC

Wash and dry the cherries and remove any stems.

Butter an ovenproof dish that will hold all the cherries in one layer, place the cherries in and set aside.

Whisk the eggs and egg yolk in a mixing bowl and add the sugar and whisk until pale in colour. Whisk in the butter. Sieve the flour and add to the mixture and then add the milk and whisk until you have a smooth batter. Pour the batter over the cherries.

Bake in the oven for 35-40 minutes or until browned. Take the tart out of the oven and sprinkle with the golden caster sugar.
