Sorbet Aux Fraises ( Strawberry Water Ice )

160 g. Sugar (Castor)
90 ml. Water
400 g. Strawberries (Fresh)
15 ml. Lemon Juice
In a saucepan on a medium heat add the water and sugar and bring to the boil. Remove from the heat and place the base of the saucepan into a bowl of cold water to cool the sugar syrup.
Wash and hull the strawberries and put them in a blender and blend until smooth. Push through a sieve to remove the seeds then add the lemon juice and the syrup.
Place the sorbet in an ice cream making machine and churn for 45 minutes or per your machine instructions.
Serve with a selection of soft fruits of your choice.
