Tarte Aux Pommes (French Apple Tart)

Preheat the oven to 425ºF / 215ºC
Grease with butter a 26cm flan tin and set aside. Roll out the pastry and line your tin with it.
Wash and dry the apples then peel, core and quarter the apples, then cut each quarter into 4 slices. Arrange the apple slices around the flan dish evenly starting by doing a ring around the outside evenly spaced then a second ring inside the first. Don't worry if the inside ring overlap the outside ring slightly.
Bake the tart in the oven for 15 minutes.
Meanwhile in a mixing bowl combine the egg yolks, sugar, vanilla and cinnamon and whisk together. Add the cream and whisk again.
After 15 minutes cooking remove the tart from the oven and gently fill the tart with the cream mixture and return to the oven to cook for a further 35 minutes or until the apples are tender. Serve warm.
