Classic French, Sweet Treat Vegetarian Nut Free, Eggs

3 Eggs
60 g. Sugar (Castor)
½ tsp. Orangeflower Water
60 g. Butter (Soft)
60 g. Plain Flour

Preheat the oven to 375ºF / 190ºC

Butter your madeleine tin.

In a mixing bowl beat the eggs and sugar until the mixture is pale in colour, add the orangeflower water and butter and mix together. Sift the flower into the bowl and gently fold the flour into the mixture.

Divide the mixture into the madeleine tin only filling them 3/4 of the way.

Bake for 12-15 minutes until risen and golden in colour. Cool on a cake rack before serving.
