Baked Croque Madame

Method
In a small saucepan on a medium heat add the butter and sprinkle the flour over the butter and whisk together until the mixture becomes a light golden brown.
Slowly add the milk while whisking continuously. Add the mustard, nutmeg, grated garlic and a good seasoning of salt and pepper while continuing to whisk.
Allow the mixture to bubble while continuously stirring until it becomes thick and elastic. Put to one side.
Sandwiches
Preheat the oven to 430ºF / 220ºC
Slice the baguette into 24 x 1 cm slices and lay them on a baking sheet covered with baking paper.
Spoon a tablespoon of béchamel sauce onto each slice and sprinkle some grated cheese on top of the béchamel sauce. Add two slices of ham onto 12 of the slices and place the other 12 slices on top of the ham, cheese side up.
Bake in the oven for 10-15 minutes until the sauce and cheese are bubbly and the top is golden brown.
While the croque is baking, heat a frying pan with some oil and fry 6 eggs. Remove the croque Madame from the oven and place a fried egg on the top of each sandwich. Serve immediately.
