Classic French, Lite Bite Vegetarian Nut Free, Eggs Large

French Omelette

2 Eggs Large
¼ tsp. Salt to Taste
10 g. Butter (Unsalted)
25 g. Cheese - Mozzarella

In a small mixing bowl whisk the eggs and salt. Place a small non stick frying pan on a medium heat and melt a knob of butter in the pan.

When the butter is bubbling and frothy reduce the heat to low and add the egg mixture. With a spatula pull the egg mixture forward to the centre of the pan to let the liquid egg fill the gaps. Continue doing this until the eggs are almost set.

Shake the pan back and forth a few times to settle the mixture. The omelette should slide easily and still be moist on top.

Sprinkle the grated mozzarella over the egg mixture and add any toppings.

Gripping the handle underneath, tilt the pan down away from you and let the omelette fall to the edge. Fold the side nearest to you over by a third with your fork, and keep it rolling over, so the omelette tips onto a plate.
